Hawaiian Haystacks

No one probably looks at this anymore.. but I figured I would post some recipes anyways just in case.

Hawaiian Haystacks

sauce:
2 cans of Cream of Chicken soup
1 cup of chicken broth
2 cups of chicken

boil chicken. use 1 cup of the chicken broth and mix with cans of soup. shred or cut chicken into cubes and add to sauce

rice (follow directions on bag)

toppings:
cheese
chow mein noodles
pineapples
celery
green onions
bell pepper
tomatoes
almonds
coconut
(these are all suggestions, you can add or experiment how you'd like)

Chicken Ole!

So my mother gave me this yummy recipe. It is way good. Also easy and quick to make.

Mix together in a deep frying pan or pot:
1 can corn (drained)
1 can pinto beans (partly drained, keep some of the juice in them)
1/2 can kidney beans (drained)
1 can tomato sauce (the small size)
1 tsp chili powder
1/2 tsp onion powder
add salt, pepper taste
stir and warm this up
cook and shread some chicken (1 to 2 breasts is good) then add to the bean mixture.Serve it over chips with cheese on top or with tortillas.

German Pancakes!

So I am finally going to post my recipe up on this thing. For Sunday dinner I made German Pancakes! I absolutely love them! They are quick and easy to make. Here is the recipe:

German Pancakes

6 eggs
1 cup milk
1 cup flour
1/2 tsp. salt
5 tablespoons butter

Whip eggs until thick and lemon colored. Add milk, flour, salt. Melt butter and put in bottom of 9x13 pan. Pour batter over melted butter and bake 15-20 minutes at 450 degrees.

There you go. Now go make some yummy food! Enjoy!!!

Sweet Potato Mash/ cilantro ranch dressing

    8 servings


    Ingredients

    • 3 pounds sweet potatoes, peeled and cut into chunks
    • 1/2 stick butter
    • 1 banana, sliced
    • 1 orange, zested and juiced
    • 1 cup chicken stock
    • 1/2 cup brown sugar
    • 1/2 teaspoon grated nutmeg (I used cinnamon instead, and it was good)
    • Salt and pepper

    Directions

    Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.



    For Cilantro ranch dressing...


    just mix ranch, cilantro, and fresh lime juice in a blender and press "liquefy."



    If you guys were wondering about the marinade I put on the chicken... it is Mesquite with lime. I recommend the "Newman's" brand. I haven't seen it in any of the grocery stores I have been to in Utah, but it's the best.

    Almost Salsa.

    -3 cans of corn
    -1 can of black beans
    -1 can of white beans
    -4-6 tomatoes
    -a healthy amount of chopped up cilantro
    -5-6 limes
    -Italian dressing

    Drain the corn, drain the beans, dice up the tomatoes, chop up the cilantro.

    Throw it all into a bowl. Squeeze the heck outta the limes so you get as much juice as possible in the mix. Add a splash or three of Italian dressing (not too much, definitely no more than 1/2-3/4 of a cup). Mix it all together.

    Eat.

    Teenage Mutant Ninja Turtle Approved


    2 1/2 tsp yeast
    1 tsp sugar
    1 C warm water
    Let rise until doubled in size

    3 C flour
    1 tsp oil
    1/4 tsp salt

    Pour water mixture over flour mixture - mix and let rise for 30 minutes.

    Be sure to poke holes with fork in pizza dough before you pour on pizza sauce!
    Add any additional toppings that you wish!

    Cook pizza 30 minutes on 350
    ENJOY!!

    Asian Chicken Salad/ Coconut Rice/ Pineapple Punch

    Chinese Chicken Salad
    4 chicken breasts, cooked and cubed
    1 head cabbage, shredded
    1 bunch green onions
    2 pkgs. ramen noodles, crumbled up
    2 T almonds*
    2 T sesame seeds*
    2 T sunflower seeds*
    *I like to toast these in the oven before adding to the salad.

    Dressing:
    3/4 cup oil
    2 T vinegar
    2 T soy sauce
    1/2 T pepper
    3 T sugar
    2 packets seasonings from ramen

    Combine in large salad bowl chicken breasts, cabbage, green onions and ramen noodles. Combine almonds, sesame seeds and sunflower seeds in small pan and toast in oven at 400 degrees for 3 minutes. Cool nuts, then add to salad mixture. Make dressing by combining oil, vinegar, soysauce, pepper, sugar and ramen noodle seasonings. Add to salad and toss.

    I also like to add other things to the salad, such as craisins and mandarin oranges. The salad is also very good with the ramen noodles cooked.



    Coconut Rice
    Okay... I don't really have a very specific recipe for this one, but this is what I do:
    2 cans of coconut milk
    2 cups of water (or just equal to the amount of coconut milk)
    3-3 1/2 cups jasmine rice
    add sugar to taste.

    Heat the liquid and sugar in a large pot or saucepan (rice cookers also work quite well) until the sugar is dissolved. Taste the liquid to test the sweetness. Add the rice, and heat on high until it starts to boil. Turn it down to medium/low heat for about 30 minutes, or until the rice is soft and the liquid is absorbed.


    Pineapple Punch
    1 Quart pineapple sherbet ice cream
    2 liter ginger ale soda
    1 large can of pineapple juice

    Put all the ice cream in a large punch bowl. Mix in the soda and pineapple juice however you like it! Very tasty.
