Chinese Chicken Salad
4 chicken breasts, cooked and cubed
1 head cabbage, shredded
1 bunch green onions
2 pkgs. ramen noodles, crumbled up
2 T almonds*
2 T sesame seeds*
2 T sunflower seeds*
*I like to toast these in the oven before adding to the salad.
Dressing:
3/4 cup oil
2 T vinegar
2 T soy sauce
1/2 T pepper
3 T sugar
2 packets seasonings from ramen
Combine in large salad bowl chicken breasts, cabbage, green onions and ramen noodles. Combine almonds, sesame seeds and sunflower seeds in small pan and toast in oven at 400 degrees for 3 minutes. Cool nuts, then add to salad mixture. Make dressing by combining oil, vinegar, soysauce, pepper, sugar and ramen noodle seasonings. Add to salad and toss.
I also like to add other things to the salad, such as craisins and mandarin oranges. The salad is also very good with the ramen noodles cooked.
Coconut Rice
Okay... I don't really have a very specific recipe for this one, but this is what I do:
2 cans of coconut milk
2 cups of water (or just equal to the amount of coconut milk)
3-3 1/2 cups jasmine rice
add sugar to taste.
Heat the liquid and sugar in a large pot or saucepan (rice cookers also work quite well) until the sugar is dissolved. Taste the liquid to test the sweetness. Add the rice, and heat on high until it starts to boil. Turn it down to medium/low heat for about 30 minutes, or until the rice is soft and the liquid is absorbed.
Pineapple Punch
1 Quart pineapple sherbet ice cream
2 liter ginger ale soda
1 large can of pineapple juice
Put all the ice cream in a large punch bowl. Mix in the soda and pineapple juice however you like it! Very tasty.
